To ensure the quality of products , milk tested in the laboratory on a number of physical, chemical and microbiological parameters , as well as its overall palatability. The study began with a check for milk fat, as for Ukrainian consumers is not a secret that just adding vegetable fat to the product some manufacturers are trying to save their expenses. All the fat in the tested milk turned the milk origin, besides its contents corresponded to the declared fat content. Pleased and freshness of milk : acidity were without violations, soda and ammonia, which is added to prevent acidification, also not found .
All six samples of milk without violations were tested for microbiological indicators : Escherichia coli and Salmonella was detected, MAFAM - within limits.

There are various methods of heat treatment from UHT pasteurization and to boil at home. The essence of this process is as follows: the higher the temperature, the smaller is bacteria in the milk; and the shorter the heat treatment time, the more nutrients remains therein.
Pasteurization provides a much more gentle cleaning milk than boiling . According to DSTU prevailing in Ukraine for the production of pasteurized milk should not be used raw materials below the 1st grade. After heat treatment in pasteurized milk is part of its flora, what is involved in short term storage. Such milk is primarily intended for human consumption - drinking "fresh" , as well as for cooking . Pasteurization technology is used in the dairy industry from almost 50 -ies of the 20th century , today being the most common and therefore affordable for most manufacturers .
